Dan Pilkey,
Sommelier & Fine Dining Manager, RIA at the Elysian Hotel

In 2009, Dan Pilkey was appointed Sommelier & fine dining manager for the Elysian Hotel’s two-star Michelin restaurant, RIA, and its modern bistro, Balsan. With a distinct passion for pairing unique wines with cuisine that runs the gamut, Pilkey has developed his skills by serving as a lead Sommelier for Addison Restaurant in San Diego, as well as Wine Director and Manager at 910 Restaurant in La Jolla, California.

While attending seminars to develop skills in making wine, Pilkey earned a Business of Wine Certificate at San Diego State University in 2004, as well his Court of Master Sommeliers Advanced Certificate in 2008.

Currently, Pilkey continues to keep his palate sharp and his knowledge of wine current by working with the Society of Wine Educators and the Wine & Spirits Education Trust.
